My Baby Girl's New Tank from mine

My little girl is 9 month's old now. I had this tank that used to fit (who knows how??). It was an XXS.

My sister had given my girl this tank, so I used this as my inspiration.
I think she thought I was going to take it away.  Just tak'in a picture baby!
I sewed in the sides, shorted the bottom and cut the top straps and shortened them.  I was going to sew some cute buttons over top the straps, but I haven't gotten to it.

I grabbed a scrap from my husband's cut up t-shirt.  Ran a baste stitch and then gathered it. I then rolled it around into a flower and stitched it on.
Viola!

Canadian Pork Roast

I got a 1.5 lb Canadian Pork Roast at Stracks. I only paid $3.63. What a great piece of meat for the price!

Ingredients:
1.5-2 lb Pork Roast
Olive Oil
Salt and Pepper
Garlic powder
Dijon Mustard
Thyme

Directions: 
Heat Oil in saucepan.
Season Pork with Salt, Pepper, Garlic and Thyme.
Put in hot pan, and sear all sides until brown. 
Place in a Pyrex pan sprayed with cooking spray. 
Spread Dijon mustard over the top of roast with a brush.
Dash a little more Thyme, and put in oven at 350 degrees for 1 to 1.5 Hours. 
Use your meat thermometer to check doneness.

This turned out soo tender and juicy. Make sure you wait 10-15 Minutes before cutting into the meat, so the juices redistribute back into the Pork.

Butternut Squash Chicken Pasta

Ingredients:
1 Cup of Cooked Butternut Squash
1/4 Cup of Cooked unbreaded Chicken Breast Strips
1 Tbsp. Diced Green Pepper
1/2 Cup of Milk
1/2 Tsp. minced garlic
Salt and pepper to taste
6 Oz of Cooked egg noodles

I dashed a little crushed red pepper on mine for some kick.

Directions:
Puree your squash, adding a little milk at a time. Add garlic. Puree to mix. Taste, and add salt and pepper. 
In a pan, saute' your chicken and green pepper. Mix all ingredients together. Enjoy!

Burp Cloth Helper

Looking to add a little something to my girl's burp cloth.
I cut a strip off the bottom of this old shirt.

I sewed around it and turned it right side out. Then I ran a loose stitch with my sewing machine and then pulled one of the strings to gather it.

Sewed this right on there. I love that it can hook it.  Nice for drying them out sometimes.

Still folds up nice too.  I use these for cleaning up my little girl now that she 9 months. Growing up quick!

Cauliflower Pea Soup with Chicken Quesadilla

Chicken Quesadilla   
Hunger is a good time to come up with something good. I made this for lunch today.

Ingredients:
Chicken Strips
Green pepper, diced
Mozzarella Cheese
Corn tortillas, warmed
Olive Oil

Directions:
Put first three ingredients onto one side of tortilla and fold over.  Heat olive oil in pan.  Place Quesadilla into pan and brown on both sides. Serve with sour cream.  EAT!

Cauliflower Pea Soup
Ingredients:
1 cup frozen cauliflower, thawed
2 Cups frozen peas, thawed
2 1/2 Cups of Milk
1 clove garlic, minced
1 Tbsp. Onion, diced
1 Small diced potato, cooked
Grated Parmesan Cheese
2 Chicken bouillon cubes
1/3 Cup Shredded Mozzarella Cheese

Puree Cauliflower, Peas, and a 1/2 Cup Milk in blender.  Saute garlic and onion for 1 minute.  Pour into Saucepan and add 2 Cups of Milk, puree mixture, diced potato, cheese and bouillon cubes.  Simmer for 10 Minutes.  Add Mozzarella cheese. Serve.

For the Little Ones...Homemade Baby food

Just when I thought $0.59 for a jar of Baby food wasn't bad, I saw a whole jar of natural applesauce for $1.29!

This ice tray is ready for the freezer. I did fresh pineapple, applesauce, peas, and mango. I didn't have my carrots cooked, or I would have put those in the mix too.  My "little Oscar" pureed this up real nice.

Once frozen, I can put them in a Ziploc freezer bag and take out what I need. They also won't stick together, being already individually frozen.  I'll just add some meat and pasta, potato, or cereal to this.

I also filled some cleaned baby jars with a banana, apple, mango mixture for the refrigerator. Ready to go!

Cream Cheese Pepper Salad

This is a very delicious salad.  
What may look like tofu, is actually baked cream cheese cubed.  The croutons are homemade from my two day old french bread.  They are extra good when they soak up the dressing!


You can't see the sunflower seeds or pepper rings..I forgot to take pictures the night I made it!

Ingredients: 

Cream cheese, cubed in bite size pieces
Orange zest
Pepper
Garlic powder
Romaine lettuce, chopped
Carrot, shaved
Sunflower seeds
Mild Pepper rings, sliced a bit smaller
Croutons 


I did a balsamic dressing for this salad, but you could probably use any kind.

Directions:
 
Heat oven to 400 degrees.

Place cream cheese on non stick sprayed baking pan.

Sprinkle with Garlic powder, orange zest and pepper to your taste.

Bake 8 to 10 Minutes until lightly browned. Cool slightly, then removed to a plate; set aside.

Add the rest of your ingredients to a bowl, top with cream cheese and drizzle dressing.

So very good, and a nice compliment to almost any meal.

I  went to Strack and Van til and got the yellow pepper rings and sunflower seeds from the salad bar. Only cost me $0.20, instead of $5.00. Now that works for me!

Sorry I haven't sent anything in awhile. I haven't had a camera for days...long days. I made some beautiful stuffed pork chops last night, and couldn't get a picture. Sad, but I guess that means I'll have to make them again so I can share them with you.

A New Take on Italian Fettuccine Pie

This is the next day, and it was still so good!
I think some of the best recipes happen when you add your own twist. 

This past week, I thought I had cottage cheese in my fridge. Well, I wasn't wrong; but boy was I wrong! It expired Christmas Day. So, being a Woman of hunger and desperation, I decided to substitute a half brick of Cream cheese and used Italian Sausage instead of Ground beef.  What a wonderful change!  We loved it.  I covered the whole top of the pie with sauce, 'cause we're not a fan of crispy pasta.  Still, keep the foil covering this when you bake it.

Happy New Year!! Getting a Handle on things?




Andrew surprised me with new handles for our refinished cabinet on New Year's Day.  We painted it some years ago, and I had even forgot it had handles to begin with.

I believe he made these out of Cherry wood, but I may have to get back to you on that one.
This was a drawer the whole time!!

With the Holiday's keeping everyone so busy, it's nice to sit down and return to my blog. I hope everyone had a good time on New Year's.  I have lots of great ideas to share with you in 2011.
