Banana Krispies

Check out this healthier version of regular Rice Krispies.  Great for a party!

Ingredients:
2 Cups Banana Nut Crunch
4 Cups Rice Krispies
1/4 Cup Raisins
10.5 oz bag of mini marshmallows
3 Tbsp Butter or margarine
Chocolate Sprinkles

Directions:
Melt butter and add marshmellows. 
Melt on low to medium heat. 
Once all melted turn off heat and add cereals and raisins and mix gently together. 
Spray a spatula with non stick spray and also spray a 9" x 13" pan. 
Put the mixture into the pan and flatten with the spatula. 
Add Chocolate sprinkles and press again. 
Let cool and cover with plastic wrap. 
The raisins keep these from turning into rocks. 
I love the banana taste!

Zucchini Egg Fritters

 My Mom gave me this recipe, and it is delicious!  A great way to use Zucchini.

Ingredients:
1 Cup Shredded Zucchini
1/4 Cup chopped Onion
2 Large Eggs
Salt and pepper
1/4 Tsp Garlic Powder
1/4 Tsp Onion Powder
Cooking spray

Directions:
Coat frying pan with cooking spray. 
Turn on medium heat. 
Stir together all ingredients and add to the hot pan. 
Cook for 3 minutes until it looks stable enough to flip. 
Using your spatula, cut into 4 sections and flip over. 
Cook an additional 2 minutes or until the egg is done. 
Serve. 

I also added a tbsp of mozzarella shredded cheese to my mixture.  This is a very tasty breakfast, or in my case today, brunch. 

I'm roasting a chicken today, one of my favorite things to do...any thoughts on great side dishes?

I was just thinking of these today, as Walmart is having a great sale on blueberries!

Lemon Chicken Pasta


 In this dish, the chicken really absorbs the lemon for a fresh taste in this pasta.

Ingredients:
8 oz Spaghetti
4-5 Pre cooked Chicken Tenderloins- Baked with salt and pepper
4 Tbsp Olive Oil
1/2 Tbsp Red Pepper flakes (or to taste)
1 Clove garlic, minced
1/4 Cup Lemon Juice
1/3 Cup of Grated Parmesan
Salt and Pepper

Directions:
Cook Spaghetti to package instructions and drain.  Slice tenderloins thinly (is that a word?) at an angle.  In a pan, add oil, red pepper flakes, and garlic. Saute for 2 minutes on medium-low.  Add the pasta and chicken and mix.  Add lemon juice and Parmesan and toss together.  Season to taste with S + P.

Custom Circle Skirts

This is one of the fun skirts out there to make.  I saw it on a blog and made one for my daughter.
A couple sheets of paper, a ruler and a calculator and you can make one sized for you.
You can find the tutorial here
You can get colored elastics at Joann fabrics, or dye your own with Rit Dye on white cotton blend elastic.  The more cotton in the elastic, the better the dye will take. 
This is a super cute skirt, no seams!
