This mixture goes great with a lot of foods. Add it to your chicken tacos, use it for a dip, or top off one your your dishes.<br />

Ingredients:<br />
5 Roma Tomatoes<br />
1/2 Cup Corn<br />
1/2 Can Black beans, rinsed<br />
1 Seeded Jalapenos, diced small<br />
1/2 Small red onion diced small<br />
Juice of 1 lime<br />
2 Table spoons olive oil<br />
Salt and pepper <br />
chopped Cilantro optional <br />
<br />
Combine all ingredients and mix well. Refrigerate for an hour or up to 4 days. Super refreshing and healthy, great for BBQ's!<br />

This chicken is full of flavor and super easy to make.<br />
<br />
You'll need:<br />
6 Chicken Tenderloins<br />
2 Slices of bacon, cooked and crumbled<br />
1 1/2 cup breadcrumbs, panko style<br />
Garlic Powder<br />
Onion Powder<br />
1/2 cup prepared honey mustard<br />
3 Tbsp melted butter <br />
<br />
Directions:<br />
Preheat oven to 425 F degrees. Cover a baking sheet with foil and spray nonstick. Place tenderloins on sheet and brush with honey mustard, just the tops. Mix bacon, breadcrumbs, garlic and onion powder together. Top with breadcrumb mixture, again just the tops of these. Drizzle with butter. Bake for 20-25 minutes or until cooked through. Serve with additional honey mustard. Enjoy!<br />

Some of the best recipes happen when your using up leftovers. I made a roast in the crockpot and cut it in half, to save for another night. I wanted to present it differently, and came up with this sauce. <br />
<br />
<b>Dijon sauce</b><br />
1/2 Onion, diced<br />
2 Tbsp Rice Vinegar<br />
1 Cup of beef broth ( I used the juice from the roast)<br />
3 Tbsp Dijon Mustard <br />
2 Tbsp Butter<br />
<br />
Start the onion in a pan on medium heat. After a minute or two add the vinegar and start to deglaze the pan stirring up any browned bits. Add the broth and simmer until slightly reduced, 2-3 minutes. Reduce heat to low, and stir in mustard and butter. Keep the sauce warm until serving. Serve up beef and ladle sauce over top. Delish<br />

<b>Steak Roasted Potatoes</b><br />
<br />
My new favorite seasoning is the Stonemill Essentials Steak seasoning from Aldi. About $.99 cents. It's super tasty. <br />
<br />
3 Russet pototoes<br />
3 Tbsp Olive oil<br />
1 Tbsp Steak seasoning<br />
<br />
Preheat oven to 400degrees F.<br />
Slice potatoes into qtrs, bite size pieces.<br />
Toss in olive oil.<br />
Spread on a greased baking sheet.<br />
Sprinkle Steak seasoning over potatoes.<br />
Bake 20 minutes, then stir and flip potatoes and bake another 5 minutes or until cooked through. They should be nice and crispy on the outside and soft on the inside.<br />

I cut a strip off of the bottom of a skirt, ran a gathering stitch (Just a loose big stitch which on my machine is a 4 length) and leaving the beginning and end loose gathered up the piece. </div>

My daughter really likes puzzles, and sometimes needs a little something different. On Crayola's website, they have a lot of coloring sheets and kids crafts ideas. I came across the puzzle sheet. They draw their own picture and make it their own puzzle. Obviously you can cut your own designs but I thought it was a really cute idea. They have several different ones. I helped Claire with this one. <br />

I've always loved couscous, but now that Aldi carries it I buy it all the time. All you have to do is boil water and then add the couscous and cover. 5 Minutes later, its ready! I also grilled up some chicken and sliced it to round out the meal. <br />

In and 8x8 pan, spray non stick spray. Turn oven to 350F degrees. Mix eggs and milk and add salt and pepper. Add cheese, stir and pour in pan. Add tater tots on top. Place into your oven for 45 minutes or until egg in the middle is cooked. Turned out really good, and I got last nights dishes done while it baked. My 2 yr old loved it too, which is a definite plus!<br />

It looked amazing so I had to give it a try. I changed up my recipe a bit for what I had available to me. I've made it twice and here is another one I did without the peas. The sauce is the amazing part. I just love it. <br />

I used <a href="http://newfoundhome.blogspot.com/" target="_blank">boneless pork chops</a> that I brined( water, salt, brown sugar) overnight. I put mine in a pan and brown each side and then put in the oven for 10 minutes at 425 F degrees. I then bake my rice in the oven for 45 minutes and let it cool while I made the egg and such of the fried rice. I used canned Pineapple and tossed it into the rice mix in the pan to heat it. The sauce is also done in a separte pan and then I pour it over the pork chops in a separate dish with a cover. BEST EVER. While I was posting this, I've just decided we are having this tonight as well. <br />

Check out this healthier version of regular Rice Krispies. Great for a party! <br />
<br />
<b>Ingredients:</b><br />
2 Cups Banana Nut Crunch<br />
4 Cups Rice Krispies<br />
1/4 Cup Raisins<br />
10.5 oz bag of mini marshmallows<br />
3 Tbsp Butter or margarine<br />
Chocolate Sprinkles<br />
<br />
<b>Directions:</b><br />
Melt butter and add marshmellows. <br />
Melt on low to medium heat. <br />
Once all melted turn off heat and add cereals and raisins and mix gently together. <br />
Spray a spatula with non stick spray and also spray a 9" x 13" pan. <br />
Put the mixture into the pan and flatten with the spatula. <br />
Add Chocolate sprinkles and press again. <br />
Let cool and cover with plastic wrap. <br />
The raisins keep these from turning into rocks. <br />
I love the banana taste!<br />

My Mom gave me this recipe, and it is delicious! A great way to use Zucchini.<br />

1 Cup Shredded Zucchini<br />
1/4 Cup chopped Onion<br />
2 Large Eggs<br />
Salt and pepper<br />
1/4 Tsp Garlic Powder<br />

Cooking spray<br />

Coat frying pan with cooking spray. <br />
Turn on medium heat. <br />
Stir together all ingredients and add to the hot pan. <br />
Cook for 3 minutes until it looks stable enough to flip. <br />
Using your spatula, cut into 4 sections and flip over. <br />
Cook an additional 2 minutes or until the egg is done. <br />
Serve. <br />

I also added a tbsp of mozzarella shredded cheese to my mixture. This is a very tasty breakfast, or in my case today, brunch. <br />

In this dish, the chicken really absorbs the lemon for a fresh taste in this pasta.<br />
<br />
<b>Ingredients: </b><br />
8 oz Spaghetti<br />
4-5 Pre cooked Chicken Tenderloins- Baked with salt and pepper<br />
4 Tbsp Olive Oil<br />
1/2 Tbsp Red Pepper flakes (or to taste)<br />
1 Clove garlic, minced<br />
1/4 Cup Lemon Juice<br />
1/3 Cup of Grated Parmesan<br />
<b>S</b>alt and <b>P</b>epper<br />
<br />
<b>Directions:</b><br />
Cook Spaghetti to package instructions and drain. Slice tenderloins thinly (is that a word?) at an angle. In a pan, add oil, red pepper flakes, and garlic. Saute for 2 minutes on medium-low. Add the pasta and chicken and mix. Add lemon juice and Parmesan and toss together. Season to taste with S + P.<br />

Suave Professionals sleek conditioner. Wow. At $1.78, I like this more than the $6 Loreal Sleek I was using. I wouldn't even have considered trying it, but at my last haircut, I was told this is better than most things out there, even Matrix. The lady at Hair Cuttery said they did a recent study/test on shampoos and conditioners. Pantene (which I was also using) and Head and Shoulders scored the lowest. She said that there was floor polish in H & S and Pantene was the worst for leaving a residue on your scalp and hair. What? I'm not saying that I'm not still going to use it, however I did come out on top money wise as Suave Professionals exceeded my expectations. I'm a believer. <br />

Chicken is one of the most versatile meats out there. I'm always looking for new ways to serve it up.<br />
Here's another I wanted to share with you.<br />
<br />
<b>Ingredients: </b><br />
2 Chicken Breast, butterflied <br />
3 Tbsps. Olive Oil<br />
1 1/2 Tsps Garlic Powder<br />
1/4 Cup Rice Vinegar<br />
1 Tsp of dried Thyme<br />
Dash of pepper & Salt<br />
3/4 Cup Breadcrumbs (+ or -)<br />
1 Egg, beaten<br />
<br />
<b>Directions: </b> <br />
In a resealable bag, combine 1 Tbsp Olive oil, garlic powder, rice vinegar, pepper, salt and thyme with the chicken. <br />
Let marinate in the fridge for an hour. <br />
Take out chicken, discard marinade.<br />
Dip chicken pieces into egg then breadcrumbs (<a href="http://newfoundhome.blogspot.com/2011/05/homemade-breadcrumbs.html" target="_blank">I made my own</a>)<br />
In a pan, add a couple of tbsps of oil and heat over medium. <br />
Add chicken to the hot pan, turning halfway through cooking. <br />
Let sit for 5 Minutes.<br />
Slice at a diagonal and serve. <br />
Full of flavor! <br />

I'm really digging these pretzels I made the other day. Potluck, here we come!<br />

Ingredients:<br />
1/2 Cup Canola Oil<br />
1 Packet Dry Ranch seasoning<br />
1 Bag Pretzels (normal size)<br />
1 Tsp Garlic Powder<br />
1/2 Tsp Lemon Pepper<br />
1/2 Tsp Dill Weed<br />

Directions:<br />
Preheat oven to 350 F degrees. Place seasonings and oil in a big ziplock bag and mix together. Then add pretzels and mix until well coated. Open onto a cookie sheet. Heat in the oven for 5 minutes, flipping the pretzels casually halfway through. <br />

It's 2 o'clock again and I haven't eaten. I searched my fridge and sauteed this together.<br />

I put this in a pan with a tiny bit of butter and olive oil, and sauteed it for about 5 minutes. Turned out really tasty and,who knew, healthy too. <br />

This was a nice <a href="http://www.custommade.com/bench/by/thechicagobenchco" target="_blank">rustic bench</a> with painted black legs. His client had a general design in mind, and Andrew drew up this one. Beautiful. I love how he made it look old. I want one for our house!<br />

I have the luck of having red, yellow, and green peppers. I wanted to use them as a side, so I came up with <a href="http://newfoundhome.blogspot.com/" target="_blank">this</a>. <br />
<span style="font-size: large;"><b>Ingredients:</b></span><br />
1/2 Cup of each pepper, sliced into strips<br />
1/4 Cup of Onion, sliced into strips<br />
1 Tbsp Olive Oil<br />
Dash of Salt<br />
Fresh Ground pepper<br />
1/2 Tsp Garlic Powder <br />
3 Tbsp Red Wine vinegar<br />
<br />
<span style="font-size: large;"><b>Directions: </b></span><br />
Saute the Peppers and onions in olive oil for 7-10 Minutes over medium heat. <br />
Add seasonings, and stir around for another minute. <br />
Turn off the heat and add the red wine vinegar. <br />
That's it, your done. Serve it up. I had mine with Sausage and Rice and a slice of bread I toasted on one side with butter, garlic and basil. Wonderful! <br />

Ahh...spring. I just love that smell of fresh air. I also love garden fresh vegetables. Obviously it's too early for vegetables in the back yard, but I made these green beans the other day, and they hit the spot.<br />
<br />
<b>Ingredients:</b><br />
8 Oz Frozen Green beans<br />
Bacon Drippings<br />
3 Tsp Brown Sugar<br />
Pinch of Salt<br />
<br />
<b>Directions:</b><br />
Add frozen green beans to a tbsp or so of bacon drippings. Cover and let it heat up for 5 Minutes. Then add sugar and salt. Pepper is optional. Uncover and saute until cooked through. <br />

I've already been to a garage sale, I can't believe they were already ready. I got a purse for $1. Super cute. I went about transferring my things over, only to find 7 Pens & 3 Pencils, not to mention old receipts and bags of snacks for the little one. I saw <a href="http://smashedpeasandcarrots.blogspot.com/2011/05/little-girls-crossover-pinafore-pattern.html" target="_blank">this</a> cute Pinafore dress made for 6-12 month babes. The lady made the pattern but was using the dress as a shirt for her toddler girl. <br />

I tried it, and it is an easy pattern. However I do wonder if it printed at 111% instead of 100%. She said there was an issue with it, and this fits my almost 2 year old perfect, even almost as a dress. Matched with some cute leggings this thing is super cute. <br />

4 Medium Potatoes, peeled and cubed<br />
1 Tbsp Honey<br />
Pepper, to taste <br />
1 Tbsp Dijon Mustard<br />
2 Tbsp Olive Oil <br />

Preheat oven to 375 F Degrees. Mix honey, pepper, Dijon mustard and Olive oil in a bowl. Using a whisk works well. Then add potatoes and mix all together. Spray non stick spray on your baking pan, and add potatoes. Bake for 30-35 Minutes, until fork tender. We had it with fish sandwiches and corn. Very nice flavor.<br />

I used jean and some "pleather" I had in my fabric stash. This vest was easy to make and now I'm coming up with a girly version of my own. I didn't add any buttons to this one, but you can of course. <br />

I think I'll be making another one, but with cotton fabric. It would definitely make the arm holes easier to do. <br />
