Tomato, Black Bean and Corn Salsa

Chicken guacamole taco

This mixture goes great with a lot of foods.  Add it to your chicken tacos, use it for a dip, or top off one your your dishes.

Ingredients:
5 Roma Tomatoes
1/2 Cup Corn
1/2 Can Black beans, rinsed
1 Seeded Jalapenos, diced small
1/2 Small red onion diced small
Juice of 1 lime
2 Table spoons olive oil
Salt and pepper
chopped Cilantro optional

Combine all ingredients and mix well.  Refrigerate for an hour or up to 4 days.  Super refreshing and healthy, great for BBQ's!

Breaded Honey Mustard Chicken

This chicken is full of flavor and super easy to make.

You'll need:
6 Chicken Tenderloins
2 Slices of bacon, cooked and crumbled
1 1/2 cup breadcrumbs, panko style
Garlic Powder
Onion Powder
1/2 cup prepared honey mustard
3 Tbsp melted butter

Directions:
Preheat oven to 425 F degrees.  Cover a baking sheet with foil and spray nonstick.  Place tenderloins on sheet and brush with honey mustard, just the tops.  Mix bacon, breadcrumbs, garlic and onion powder together.  Top with breadcrumb mixture, again just the tops of these. Drizzle with butter. Bake for 20-25 minutes or until cooked through.  Serve with additional honey mustard.  Enjoy!

Roast Beef with Dijon Sauce

 
Some of the best recipes happen when your using up leftovers.  I made a roast in the crockpot and cut it in half, to save for another night.  I wanted to present it differently, and came up with this sauce.

Dijon sauce
1/2 Onion, diced
2 Tbsp Rice Vinegar
1 Cup of beef broth ( I used the juice from the roast)
3 Tbsp Dijon Mustard
2 Tbsp Butter

Start the onion in a pan on medium heat.  After a minute or two add the vinegar and start to deglaze the pan stirring up any browned bits.  Add the broth and simmer until slightly reduced, 2-3 minutes.  Reduce heat to low, and stir in mustard and butter.  Keep the sauce warm until serving.  Serve up beef and ladle sauce over top.  Delish

Flavorful Steak Roasted Pototoes

Steak Roasted Potatoes

My new favorite seasoning is the Stonemill Essentials Steak seasoning from Aldi.  About $.99 cents.   It's super tasty. 

3 Russet pototoes
3 Tbsp Olive oil
1 Tbsp Steak seasoning

Preheat oven to 400degrees F.
Slice potatoes into qtrs, bite size pieces.
Toss in olive oil.
Spread on a greased baking sheet.
Sprinkle Steak seasoning over potatoes.
Bake 20 minutes, then stir and flip potatoes and bake another 5 minutes or until cooked through.  They should be nice and crispy on the outside and soft on the inside.

T Shirt Ruffle

I had a couple of shirts and pieces that I don't really wear.  
I cut a strip off of the bottom of a skirt, ran a gathering stitch (Just a loose big stitch which on my machine is a 4 length) and leaving the beginning and end loose gathered up the piece.  
I cut my red t-shirt into a scoop neck.  
Then I stitched it on the shirt gathering as I went along.

Made for a nice change to a shirt I was never wearing. So many options.

And I know, long time no post! In the meantime, I've worked a lot, sewed A LOT, had another baby!, and am enjoying raising the kids.  I have so many posts that I had been working on, but never completed.  I hope to get some of those finished, as well as some new ones.  Hope everyone is doing well!
